Blue Cheese Sauce

  • 50 g chopped shallot
  • 20 cl of White Wine
  • 100 gr of usalted butter
  • grounded black pepper
  • 100 ml cooking cream 35% fat 
  • 30-50 g cubed Paysan Breton Bleu d'Auvergne cheese cubes (depends on your taste)
  • In a pan, melt the butter and add the shallot. Cook the shallot till light brown color, add the cracked black pepper and add the white wine. Cook until reduced by half. 
  • Add the liquid cream and reduce again by half. Keep stirring. 
  • Remove the pan from the oven and slowly add the Paysan Breton Bleu d'Auvergne cheese cubes and the rest of butter and keep whisking until cheese and butter are melted. 
  • Season with salt and pepper
