30-50 g cubed Paysan Breton Bleu d'Auvergne cheese cubes (depends on your taste)
PREPARATIONS
In a pan, melt the butter and add the shallot. Cook the shallot till light brown color, add the cracked black pepper and add the white wine. Cook until reduced by half.
Add the liquid cream and reduce again by half. Keep stirring.
Remove the pan from the oven and slowly add the Paysan Breton Bleu d'Auvergne cheese cubes and the rest of butter and keep whisking until cheese and butter are melted.
