INGREDIENTS
4 medium flour tortillas
8 slices of Tradition's sliced cheddar cheese
8 slices of Tradition's sliced mozzarella cheese
1 cup cooked chicken breast, diced or shredded
1/4 cup diced tomatoes
2 tablespoons chopped fresh cilantro
2 tablespoons chopped red onion
2 tablespoons sliced black olives
1/2 teaspoon chili powder
1/4 teaspoon cumin
Salt and pepper to taste
PREPARATIONS
Preheat a grill or stovetop griddle to medium heat.
In a mixing bowl, combine the diced chicken, diced tomatoes, chopped cilantro, chopped red onion, sliced black olives, chili powder, cumin, salt, and pepper. Toss until well combined.
Lay two tortillas on a clean surface. On each tortilla, place four slices of Tradition's sliced cheddar cheese and four slices of Tradition's sliced mozzarella cheese.
Spoon the chicken mixture evenly over the cheese on each tortilla.
Top with the remaining two tortillas to create quesadilla sandwiches.
Lightly spray the grill or griddle with cooking spray or brush with melted butter.
Carefully place the quesadillas on the grill or griddle and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
Remove the quesadillas from the heat and let them cool slightly. Slice into wedges and it's ready to serve.
