Cheesy Grilled Chicken Quesadillas

  • 4 medium flour tortillas
  • 8 slices of Tradition's sliced cheddar cheese
  • 8 slices of Tradition's sliced mozzarella cheese
  • 1 cup cooked chicken breast, diced or shredded
  • 1/4 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped red onion
  • 2 tablespoons sliced black olives
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

  • Preheat a grill or stovetop griddle to medium heat.
  • In a mixing bowl, combine the diced chicken, diced tomatoes, chopped cilantro, chopped red onion, sliced black olives, chili powder, cumin, salt, and pepper. Toss until well combined.
  • Lay two tortillas on a clean surface. On each tortilla, place four slices of Tradition's sliced cheddar cheese and four slices of Tradition's sliced mozzarella cheese.
  • Spoon the chicken mixture evenly over the cheese on each tortilla.
  • Top with the remaining two tortillas to create quesadilla sandwiches.
  • Lightly spray the grill or griddle with cooking spray or brush with melted butter.
  • Carefully place the quesadillas on the grill or griddle and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  • Remove the quesadillas from the heat and let them cool slightly. Slice into wedges and it's ready to serve.
