  • 2 medium zucchinis, halved lengthwise
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup tomato sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

  • Preheat your oven to 375°F (190°C).
  • Using a spoon, carefully scoop out the center of each zucchini half, creating a hollow boat-like shape. Set aside the scooped-out zucchini flesh for later use.
  • In a small bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, tomato sauce, garlic powder, salt, and black pepper. Mix well to create the cheesy filling.
  • Place the zucchini boats in a baking dish or on a baking sheet lined with parchment paper.
  • Fill each zucchini boat with the cheesy filling mixture, dividing it evenly among the boats. Make sure to press the filling gently into the hollowed-out area of the zucchinis.
  • Finely chop the reserved zucchini flesh and sprinkle it on top of the cheese filling.
  • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil and continue baking for an additional 5 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
  • Once cooked, remove the zucchini boats from the oven and sprinkle them with freshly chopped parsley for added freshness and flavor.
