INGREDIENTS
2 medium zucchinis, halved lengthwise
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 cup tomato sauce
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
PREPARATIONS
Preheat your oven to 375°F (190°C).
Using a spoon, carefully scoop out the center of each zucchini half, creating a hollow boat-like shape. Set aside the scooped-out zucchini flesh for later use.
In a small bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, tomato sauce, garlic powder, salt, and black pepper. Mix well to create the cheesy filling.
Place the zucchini boats in a baking dish or on a baking sheet lined with parchment paper.
Fill each zucchini boat with the cheesy filling mixture, dividing it evenly among the boats. Make sure to press the filling gently into the hollowed-out area of the zucchinis.
Finely chop the reserved zucchini flesh and sprinkle it on top of the cheese filling.
Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and continue baking for an additional 5 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
Once cooked, remove the zucchini boats from the oven and sprinkle them with freshly chopped parsley for added freshness and flavor.
